Cooking instructions:

Preheat oven to 190°C / Gas 5.
Allow 20 mins per 450g + 30 mins.
Uncover for the last 20 mins and let rest for 10-20 mins before serving. Remove from the oven when internal temp reaches 72°C or insert knife; juice must be colourless, not pink.
